William Street



Laurent Bullion, who trained at the Famous LeNotré in Paris, opened his first boulangerie patisserie in South Yarra. My association with Laurent began with the design and project management of his 140 sq. meter Chadstone patisserie where homage was paid to the authentic French and European pastries Laurant was so masterfully producing. The imported formed glass display counter beautifully showcases Laurent’s core business, whilst the remaining café design offers intimate seating in a bustling environment. Further store roll outs based on this concept followed in Melbourne and Sydney, including this store in William Street in 2012.
