Finalist of Retail Design Institute Award 2009. Laurent Bullion, who trained at the Famous LeNotré in Paris, opened his first boulangerie patisserie in South Yarra. My association with Laurent began with the design and project management of his 140 sq metre Chadstone patisserie where homage was paid to the authentic French and European pastries Laurant was so masterfully producing. The imported formed glass display counter presents beautifully whilst the remaining café offers intimate seating in a bustling environment. Store roll outs followed in Melbourne and Sydney.
